PANEER SKEWERS



Prep Time 10 minutes
Total time Including marination 1 hour
Level : easy

You will Need
Fresh Paneer
Onion cut in to big cubes
Green Bell pepper cut in to big cubes
Red Bell pepper cut in to big cubes
Cherry Tomatoes ( optional)

Yogurt half a cup        
Dhania Powder  - 3tbs
Red Chilli Powder -3 tbs
MDH BBQ masala -3 tbs
Freshly ground ginger garlic paste-3tbs
Lemon Juice 3 tbs
Mint  3 to 4 Leaves finely chopped
Pepper powder 1 tbs
Turmeric 2 pich
salt to taste


Direction
In a bowl combine yogurt, dhania powder, Red Chilli Powder, MDH BBQ masala,Freshly ground ginger, garlic paste,Lemon Juice, Mint  3 to 4 Leaves finely chopped, Pepper powder.
 
     Make a yogurt paste with all the spices mentioned above


 
     Add to the paste Onion, Bell Peppers, Paneer , Lime jiuce,Mint,

   
                                     Pop it in the fridge and let it marinate for at least one hour



    After an hour you can either cook  it the oven 400 degrees for about 20 minutes or cook it on the 
cast  iron griddle.

VEN PONGAL


Prep Time : 10minuttes
Total Time: 25minutes
Level :Easy

You will need
Rice - 1 and a half cup (soaked)
Moong Daal - Half a cup (soaked)

Coconut                                -Half a Cup
Minced Ginger                       -Quarter Cup
Pepper corns crushed             -2 tbs
Cashew Nuts                          Half a cup
Asafoetida                              Half tbs
Ghee                                      Half a Cup
Curry Leaves                          8 to 10
Cumin seeds                           1 Tbs
Salt

Direction
Pongal is ridiculously easy and you can make it in no time.
Soak Rice and Daal for about 30 minutes. After 30 minutes pressure cook the following
Rice, Moong Daal, Coconut, Ginger minced and crushed pepper Corns add  salt to taste.

Season it with pure ghee adding Asafoetida, Cumin, Mustard, Cashew, few more Pepper corns, Curry leaves. Mix it well with the pressure cooked rice and dal.

Tips

If the rice and daal is too thick add water and keep it on low heat till you can easily stir it.
For Extra flavor you ca roast the moong daal in ghee.

DAAL PARATHA





Give Left over food a second life in a new dish.If there is lot of daal or sambar sitting in your refrigerator use it to make delicious daal parathas.

Total time 15 minutes
Level Easy

You will need
Daal /Sambar (leftover)
Onions chopped
cilantro finely chopped
Dhaniya Powder 1 tbs
Red chilli powder
whole wheat flour
extra salt
2tbs yogurt to kneed the dough

Directions:


Step 1: Take daal in a large bowl


 Step 2 : Mix finely chopped onions, cilantro, chilli powder, dhaniya powder,salt,curd and Wheat flour together and let it rest for 5 to 10 minutes and they are ready to roll. Add a little butter or ghee when you put it on tava/griddle. Take them out of tava once they turn golden brown. Enjoy the most delicious Daal Paratha.

Tip:You can also add finely chopped spinach leaves and fresh methi leaves.






 Serve it with tomato onion curd salad.

Moong Daal (Whole Green Gram) Dosa

Green gram dosa is very healthy and ridiculously easy to prepare. I have been making these for brunch latley. They taste so good. Thought I'll post it.

Total Time 8 - 9 hours
Level -Easy
Prep Time 10 min

You will Need
  • Green Gram 2 cups (soak Overnight)
  • Rice 4 table spoon (soak Overnight)
  • Ginger
  • Chillies
  • Cumin Seeds
  • Coriander
  • Curry leaves
Tips
  • Do not add more than half a glass of water while grinding the batter. If you accidentally add more water then add 2 tbs rice flour. If you add more water dosas will become too soggy
  • Add to the mixer jar-Coriander,Chilies,Ginger,Curry Leaves,Cumin seeds and soaked greengram.


     Soaked Green Gram (overnight)

    Once you grind all the ingredients mentioned above the batter looks like this






Serve with coconut chutny or red chilli Chutny.

Multi Grain Masala Poori






Total Time - 30 minutes
Level Easy

Bored of eating same old chapati curry everyday? Try this easy & healthy recipe and I am sure you will
like it.

You will Need
                                                                                              
Rice Flour                             1/2  a cup
Wheat Flour                          1/2  a cup
gram flour (besan)                  1/2  a cup
Jowar Flour(Sorghum)           1 cup
white sesame seeds                1 tbs
Turmeric Powder                   1 tbs
Asafoetida                              1& a 1/2 tbs
Green Chilli Paste                   3 tbs
Coriander Powder                  3 tbs
Fresh Coriander (Chopped)    1/2 cup
Salt
Oil (for deep frying)


Directions
Blend all the ingredients and knead it for 5 minutes, add a little oil and luke warm water while kneading the dough for better result. Let it rest for 30 minutes. Make small buns and roll them with rolling pin slightly thick.
Deep fry in a hot oil & serve it with coconut chutney.

Eggless Cake

                                       



Total Time : 1hr 15 min

Level : Easy

You will Need
Maida Flour - 2 cups
Butter- 1cup
Curd - 1/2 cup
Baking Powder - 1/2 tbs
Vanilla Essence - 1 tbs
Fresh Grated Coconut - 2 tbs
Milk Powder -1 cup
Sugar- 2 cups
Milk- 1 cup

Directions
In a pan warm the milk (do not boil) and add butter, milk powder, & sugar. At the same time Pre Heat the  oven  to 350F. Once the milk, butter, sugar and milk powder is dissolved  keep it aside for cooling. In a large bowl sift (you can use the sieve) the maida, Baking powder and also add grated coconut, Vanilla essence and sour curd, finally add the milk mixture to maida and beat it only for 10 min. Pour the batter to a baking pan which is greased and bake it for 45 minutes.

Crispy Veggie Sprig Rolls

                                                         



Total Time - 30 45 min
Prep Time -15 min
Level Easy

You will need
Green Bell Pepper  thinly cut in to strips                                                    
Yellow Bell Pepper thinly cut in to strips
Red Bell Pepper thinly cut in to strips
Carrot thinly cut in to strips
Bean sprouts
Garlic Minced
Asian Rice Vermicelli
Soy Sauce
Ching's all purpose sauce
Pepper Powder
Salt
Oil for frying

Directions
Cut all the Veggies and set aside. Boil the rice vermicelli and keep it to cool down.
Stir fry all the veggies with minced garlic in a pan with 1 tbs of vegitable oil.Once all the veggies are half cooked add the boiled vermicelli and fry it for 3 minutes. Finally add the Sauces with a pinch of salt. Do not add lot of salt as soy sauce is salty. Once the mixture is cool put it on the pastry sheet and wrap it. You can use cold water to stick the edges of the pastry or mix one tbs of Maida flour to water and make a thick paste to stick the edges and deep fry till golden brown. Serve it hot with Ching's Red chilli sauce. Garnish with Lettuce.

Apple Kheer (Mom's Recipe)



Total Time -40 min
Prep time - 10 min
Level Easy

You will Need
Apple - Grated 2 cups
Sugar-1 cup
Almonds
Cashews                                                                                                
Pistachios
Saffron soaked in milk
Cream Milk - Two and a Half cup
Condensed Milk - 1/2 cup
Cardamom powder 1/2 tbs

Direction

Boil cream Milk and Condensed milk together for 20-25 minutes with Sugar. Mean while you need to sauté the grated apple in a pan with little bit of ghee for 5 min so that the sourness of apple goes and it does not break the milk.Once all the water content from the grated apple is gone add it to the boiling milk with soaked saffron and cardamom powder. Finally combine all the dry fruits and fry them in ghee to Garnish the Apple kheer.Serve it hot or cold.

Total Time - 15 minutes

Can be Served for Breakfast or Lunch

You Will Need

Rice Flour - 1 small cup
Gram Flour -half a cup
Wheat Flour -5tbs - (optional)
Onion Fine chopped                                                                          
Chillies Fine Chopped
Coriander Fine chopped
Curry Leaves fine chopped
Salt
Zeera
Oil
Water 1/2 cup

Directions
Combine Rice flour, Gram Flour, and wheat flour with fine chopped onion, chilli , coriander, Zeera, salt, Curry leaves turmeric powder (optional),add 3 tbs of oil and water to make think and soft batter. Note: Do not add water all at once. Keep the dough for 5-8 minutes to marinate. Then make small pancakes either by patting the dough balls directly on a thin pan or you can also roll it on a non stick sheet and fry it on the tava both sides. Spray a liitle ghee or oil for extra flavour.You can serve it hot with red chilli chutney or fresh home made butter.

Chana and Moong Daal Pakoda




You will need          
Moong Daal (Soaked in water for at least 6 hours)
Chana Daal  (Soaked in water for at least 6 hours )                            
Green Chillies -3
Lime Juice -2 tbs
Salt
Onion
Spring Onion
Pudeena leaves(mint)
Fresh Coriander leaves
Chilli Powder -1/2 tbs
Ajwain seeds -1/2 tbs
Zeera Powder - 1/2 tbs
Pinch of asafoetida
oil-1 tbs
pinch of cooking soda (optional)
Oil for frying

Directions     
Grind the following (coarsely) do not make fine paste
soaked Chana daal
soaked moong daal
chilli
salt
Lime
zeera
hing
Ajwain seeds
1 tbs oil
Pinch of Asafoetida powder

Take out the coarsely grounded paste in a pan and then add fine chopped  coriander, onion, and pudeena, keep it for 5 minutes to marinate and fry in a deep pan. The Oil should be at a proper temperature.
Serve it hot with the Pudeena chutney or Tomato Chilli sauce.
